Even though I agree that the '08 isn't as immediately accessible and enjoyable as the '07 (and is also a lot lighter), it speaks of the vintage, one that was decent for white wine in the region but very hard for red. I think that, with '09, you'll see a return to the generosity of the '07. I tasted through a small vertical with Ludwig and all the Poulsards were beautifully expressive of vintage.
